Brown bag lunch: tomato sauce soup with corn, fresh spinach, chickpeas

Today’s concoction: tomato sauce soup (thinned with a little water), chickpeas, fresh spinach, sliced red onion, white corn.

I have to say, however, that it’s still quite delicious — and fast. You’ve gotta give it points for fast.

(Used Trade Joe’s jarred marinara sauce, canned chickpeas (drained and rinsed), TJ’s frozen white corn.)
